Fresh Quality

Natural color of the head, body, and tail. The smell is clean and natural, and the meat is firm — making it fit for processing and exports to major international destinations. TAATKA uses this high quality of prawns for its fully peeled and cocktail prawns. This premium quality is maintained by proper chilling and handling right from harvest up to the factory gate. On receiving the stock, we immediately wash, peel, pack, blast freeze, and store the product at -18°C, locking in peak freshness.
Semi Spoilt

Semi Spoilt

The head and body start turning orangish, and the tail becomes blackish. The head gives off a fishy, stale smell. This quality is processed into ‘Grade 2’ prawns, commonly found in the frozen seafood sections of supermarkets and quick commerce apps. Such discoloration and spoilage are due to improper handling and breaks in the cold chain.
Fully Spoilt

Fully Spoilt

Characterized by a blackened head, reddish body, and blackened tail. Not suitable for human consumption or exports. This happens due to prolonged exposure to open air, sunlight, and germs. Lack of proper chilling and handling leads to this state. Often found in local bazaars, these prawns are peeled and cleaned and sold to eateries. The smell is putrid, and many people have had unpleasant experiences when such prawns are pushed onto them by local vendors.

TAATKA Quality

Prawns of this quality are exported as “Non-Treated” prawns to countries like Japan, USA, UK, and the EU. These are completely chemical-free, without any form of adulteration — falling under the premium segment of seafood globally. This is the highest quality prawn available from regions like India, Vietnam, Ecuador, and Indonesia. Prawns of medium to jumbo size in this grade typically sell for $15–$25 (USD) per lb (454 grams) in international markets. At TAATKA, we’re proud to bring you this exact same quality. These prawns have a natural smell, a greyish color, and firm meat. After cooking, they don’t shrink drastically, and the texture remains succulent and meaty — just the way premium prawns should be.
Grade 2 Quality

Grade 2 Quality

This is the quality most often sold across well-known restaurants in Kolkata and throughout India. These prawns are typically by-products of export processing, or processed from semi-spoilt or spoilt quality stock. They frequently still carry an unpleasant smell, even after cooking, which chefs mask by adding lemon juice. Their meat tends to be glassy or flaky when chewed. These prawns are always treated with STPP chemicals, which artificially inflate their size and weight. Once cooked, they shrink drastically, and the texture turns glassy or brittle, far from the meaty bite of high-quality seafood. Sadly, most supermarket-branded prawns also fall into this category.
Sub-Par Quality

Sub-Par Quality

This is the lowest quality, often served by local restaurants, small eateries, and food stalls. The smell of these prawns is also masked by adding lemon juice. They’re typically by-products from export processing, or prawns that didn’t even qualify for “Grade 2.” Many times, these prawns come from unsold stock of whole prawns in local bazaars, which shopkeepers peel and freeze in poorly maintained freezers. These are then sold to fast-food vendors. The result? Prawns so spoilt and discolored they look like they’ve already been boiled or cooked. Eating them can lead to stomach upsets or food poisoning — and many unfortunate customers have had exactly that experience.
